Ingredients
1 large beef brisket
Oil or butter to fry
Salt and pepper to taste
1/2 cup diced leeks or onions
1 1/2 cups breadcrumbs
1/2 cup shredded biltong
1/4 cups sun-dried tomatoes, diced
1/3 cup chopped peppadews
1/2 cup feta (more if you like)
1-2 tbsp Worcestershire sauce
Oil to fry and bake
Salt and pepper to season the Brisket once rolled
Method
1. Heat up a pan and add a generous amount of oil or butter, then add in the leeks and fry until fragrant before adding in the peppadews and sun-dried tomatoes.
2. Season lightly and then add in the breadcrumbs, biltong, and feta.
3. Then add some Worcestershire sauce, and let the filling cool.
4. Lay the brisket out, flatten it slightly with a meat hammer or a dough roller, add a generous amount of the filling, spread out on the brisket, roll the brisket up, then tie it with some kitchen string. Add some oil and seasoning.
5. Sear the brisket on all sides until brown and then place in the oven to bake for 35-40 minutes until nice and pink or cooked until desired cooking texture.
6. Let the brisket rest for 5-10 minutes before slicing and enjoying!
